Friday Favourites #3: 12.19.14

Well time is really flying by! It is hard to believe that it is almost Christmas!  I haven’t posted in almost 2 months so I have decided to share some things that have been going on recently in my life and some of my favourite things lately! Thanks to Heather at Housewife Glamour for the link up! (ps. it is still Friday here on the west coast lol)


– I am moving!
Next week I am moving back to Vancouver Island! I haven’t lived at home in over 3.5 years so
it will definitely take some getting used to! I am very excited to see my family and friends more often but it will be bitter sweet leaving Burnaby!

– I am going to California!
I have been dating my boyfriend for almost 3 years and I still have not gone home with him to California! He is from Northern California so I am flying into San Fransisco in about 2 weeks! I am so excited! I am going for just over a week and am looking forward to meeting his friends and seeing where he is from. Plus I get a vacation out of it too! I cannot wait!

– Sleepy Time Tea
I am a self proclaimed tea lover. I love almost any type of tea but I have to be super careful what type of tea I drink before bed because I am easily affected by caffeine. I bought this sleepy time tea because my brother drinks it and I love the flavour and it is perfect to drink before bed!


– Oatmeal Bites
These little bites are amazing! Not only do they taste great but they are super convenient. I bring them to work and they are great for when I am hungry but don’t have time to take a break. I used the recipe found here but I didn’t have flax seed meal so I just skipped it. Try these, you won’t be disappointed!


– Pomegranates
I love winter because pomegranates seem to be in abundance in the grocery stores. They are super tasty and every since I found this video on how to seed them, I have been buying a few every time I go shopping. Pomegranates are high in vitamin C and fibre and make a great snack!


– Getting my nails done!
Ever since I started serving again my nails have taken quite the beating. I have thin nails that tend to peel so I normally keep them pretty short so I don’t have to worry about them breaking. Last week I went and got my nails done with one of the girls I work with and I absolutely love them!

Mini Chocolate Peanut Butter Cups

So I have been meaning to post this recipe for awhile now but sometimes life just gets in the way! Lately, I have been craving a sweet treat which is not that common for me because I consider myself more of a “salty” girl! I have come up with the perfect recipe to satisfy my cravings and that recipe is these chocolate peanut butter cups. They are super simple, only 4 ingredients and the perfect size without being a sugary overkill.


1/2 cup of natural peanut butter
1/4 cup coconut oil
2 tbsp honey
1 tbsp cocoa powder

1. Mix all 4 ingredients together in a small food processor or blender
2. Line a mini muffin tin with mini muffins cupcake liners
3. Spoon 1 tbsp of mixture into each mini muffin liner*
4. Freeze for an hour **
5. Enjoy!
*Makes 12 mini chocolate peanut butter cups
**Store in freezer

Strawberry Banana Pineapple Protein Smoothie

I got off work at about 3:00 pm yesterday and was super hungry by the time I got home. I knew I needed something nutritious, filling, and delicious to help ease my hunger until dinner time. I made this super yummy high protein smoothie and I thought I would share it because it was quick but at the same time full of flavour!



1 scoop vanilla protein powder (I use GNC Pro Performance Whey Iso Burst in French Vanilla Cream )
1 cup unsweetened almond milk
1 banana
5 frozen strawberries
5 frozen pineapple chunks
1 tbsp honey


1. In a blender, mix until smooth.

Five Things Friday #10

Well it has been almost a month since I have published a blog post so this could also be titled “Back to Blogging” haha!

Anyways! Since it is Friday and I am finally done classes I figured I would hook up with Clare and participate in another Five Things Friday!


Five Things Making Me Happy!

1. I finished my two intersession courses on Monday. I am officially done all my in-class classes at SFU. I still am enrolled in an online course at the moment and that one doesn’t finish until the beginning of August but it is so nice to see the end in sight!

2. My lovely boyfriend comes home on Sunday! Travis has been back home in California for the last two weeks and before that he was in the Okanagan working for 3 days. So technically I saw him for about 12 hours two Sunday’s ago but I am super excited for him to come home to me!

3. City views! I took this one when I was volunteering and I cannot believe how clear the skyline was! The picture doesn’t do it justice!


4. This paint job I did on my nails. I must admit I watched a few youtube videos on how to properly paint your nails and I think I totally nailed it (get it…nailed it!).


5. Night time walks! I have an obsession with walking right now. I am hoping to start running again soon but there is so much construction around where I live and this has discouraged me a bit. Walking allows me to clear my mind and have some time to myself, which I love!



Five Foods I Ate!

1. Chocolate Coconut Covered Almonds. These are probably my favourite treats! I had Travis’ parents bring them from Costco in the US when the came to visit in the fall and I haven’t had them since. However, last time we made a trip to our local Costco in Burnaby I found them! I was dancing around I was so happy! They are amazingly good! Definetly a must buy every time we go to Costco!

IMG_43432. Well it is probably obvious that I love eggs and avocados so this breakfast is a no brainer. Garlic avocado toast, scrambled eggs, and extra avocado on the side! So delicious and filling!


3. Frozen grapes! I had some grapes that were just about too ripe so I popped them in the freezer and had them for a snack before bedtime! The were the perfect “treat” before bed.


4. Random salads. Since the boyfriend has been away for the last two weeks, I have had a hard time cooking for just myself. Salads have been my go to because I can make them as big or small as I want and I can throw almost anything from the fridge into them! This salad had chickpeas, feta, artichokes, cucumbers, tomatoes, red onion, and avocado in it. I just put a bit of balsamic vinegar and extra virgin olive oil on it and I was in salad heaven.


5. Banana bread! Travis’ mom gave me this recipe and I made a loaf will all the extra bananas I had in the freezer! IMG_4431

6.I know there is only supposed to be 5 things but I had to include a funny picture! The other night I got home from work and was super tired so I decided just to have a grilled cheese for dinner. I guess I forgot about it… the picture explains everything! (I did not eat this haha!)

Five Things Friday #9

Happy Friday!!! Today I have many things to be happy for so I will be linking up with Clare for another Five Things Friday Post!


Five Things Making Me Happy!

1. Today is officially the halfway mark through my summer intersession classes. I always loathe only having 6 weeks of classes but I know when they are done I am so happy! I just have to buckle down and study and in 3 weeks, 2 more classes will be completed!

2. Phone chats with far away friends. This week I was able to talk to two of my best friends who do not live in the same province as me. I am so fortunate to have been able to stay in contact with both of them over the years and I cherish their friendships!

3. This sports bra I got for $20! Nike sports bras are my favourite because they suck everything in haha! I found this one at Winners and justified buying it because of the price and because it was a pretty colour!


4. I had some really good workouts this week! The gym is definitely a de-stressor for me!

5. My new phone wallpaper! I haven’t changed my lock screen wallpaper in like a year and now I get a girly surprise every time I unlock my phone!


Five Things I Ate this Week!

1. This week I tried “Tea Pop” from DavidsTea! I got their Sangria tea with some agave added in and it was so delicious!!! I cannot wait to try more of their summer teas!


2. Rice Krispie Squares. I made these for the boyfriend but definitely had a few pieces of my own!

3. Peanut butter! On anything and everything!

4. This yummy breakfast! I mashed garlic, avocado, salt and pepper together and spread it over whole wheat toast. Then I placed a poached egg on top and devoured it!


5. Parmesan crusted lingcod with brown rice and roasted veggies. Healthy and delicious!

Five Things Friday #3

Wow it is Friday again! This week went by super quickly! I am linking up with Clare again for another Five Things Friday!


Five things making me happy!

1. I got to see my parents yesterday! They were supposed to come visit Monday but the ferry ended up being delayed until that afternoon. They decided it wasn’t worth it to come over for two hours, so they came over yesterday for the day to visit! It was so nice seeing them. I am so blessed to have them as parents. They have supported me so much over the past few years and I couldn’t be more grateful. I love them!

2. It is now officially spring! Enough said.

3. The colour of my nails. I usually only have enough patience to do one coat of nail polish on my nails but this week I decided to be girly and painted them coral. The perfect colour to welcome the warmer weather (hopefully).


4. One of my classes finished on Tuesday! It is such a relief to think that I only have to focus on three classes for the remainder of the semester!

5. Pinterest! I am obsessed with it right now! I especially love trying out new recipes. If I find some super good recipes I will post them on here!

Five Things I Ate This Week

1. Veggie Quinoa Salad – Recipe can be found here. It is such a great salad!


2. Fish Tacos & Pico de Gallo – We had some frozen tilapia in the freezer which I baked with Mrs. Dash for seasoning. I made homemade pico de gallo (SO GOOD) and we added the tilapia, pico de gallo, avocado and  iceberg lettuce into small corn tortillas. I will definitely be making this again!

3. Fresh strawberries – We bought a 2 lb. tub from Costco because they were fairly reasonably priced and they were so good. These strawberries made me excited for all the summer fruit that will soon be in season!

4. Green Smoothie – Every morning this week I have been having a green smoothie. I use spinach and do not think you can taste it at all. I have been experimenting with different recipes all week but I still think my favourite is this green smoothie I made a few weeks back. I feel like these smoothies give me a ton of energy in the morning and they taste great!


5. Poached Eggs – I love eggs! Poached eggs are probably my favourite and right now I love spreading avocado on toast, like butter, and placing the poached egg on top of the toast. Such a tasty breakfast!

Veggie Quinoa Salad

 This salad is many things … tasty, colourful, healthy and filling! It can be eaten as a side or jazzed up to be eaten as a main course. The original recipe comes from a newspaper clipping my mom gave to me; however, I am not sure which newspaper since the title was cut off. I did make some changes to this recipe to better suit my tastebuds, so here is my version of this delicious quinoa salad!

To start, combine the quinoa and low-sodium chicken broth in a sauce pan and bring to a boil. Cover and reduce to a simmer and cook until the quinoa is cooked (~10-15 minutes). At the same time, cook the edamame according to the directions.  If possible purchase the edamame beans that are already out of the shells to save yourself some time. Both of these need to be cooked beforehand so that they can cool off a bit before you add them into the salad.

While the quinoa and edamame are cooking, chop up all the veggies (peppers, onions, tomatoes, zucchini) into bite sized pieces and place into a large bowl.

Add the edamame once it has cooled and the bocconcini cheese. Mix this around.

Once the quinoa has cooled, add this to the bowl of veggies and mix.


In a separate small bowl combine the olive oil, balsamic vinegar, mustard, dried oregano, garlic, salt and pepper. Pour this over the quinoa and veggies and mix thoroughly.


Cover up the salad and let it sit in the fridge for at least an hour before serving.

This salad can last up to a week in the fridge but it does not last that long in this house! My boyfriend loves it and so do I. You can easily add chicken or other vegetables into this salad if you like but it is quite filling on its own. Here is the recipe!

Quinoa Veggie Salad

3/4 cup quinoa
1 1/2 cups low – sodium chicken broth
1 small diced zucchini
1/3 red onion
1/2 orange pepper
1/2 yellow pepper
~20 grape tomatoes cut in half
1/2 cup edamame beans (out of shell)
~20 mini bocconcini cheeses cut in half

2 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp dried oregano
1 tbsp mustard (any kind)
2 cloves fresh minced garlic
salt and pepper to taste
